In the Auditorium works on the theme of the congress, A Sense of Responsibility, continue, with a stage full of important toques. There will also be a special "Tribute to the 50th anniversary of San Domenico di Imola", a historic Italian restaurant. Four more rooms will have their spotlights on: in Sala Blu 1 the well-established Identità di Pasta, the emblem dish of Italy interpreted by eight chefs, both old acquaintances and new faces. In Sala Blu 2 instead we’ll speak of Italian Contemporary Pastry-Making, in collaboration with Petra® Molino Quaglia and Valrhona: starting with Corrado Assenza and ending with Fabrizio Fiorani, with seven more exceptional speakers. In Sala Gialla 1 a new edition of Identità di Sala, in collaboration with Cantine Ferrari, a session that’s growing in popularity. Finally, toasts and pairings continue at Identità di Champagne – Atelier des Grandes Dames.
