We complete the overview of the 2013 Fuoricongresso Restaurants with the establishments that offer Milanese and Lombard traditional cuisine: from mondeghili, to the classic saffron yellow risotto all’onda (creamy) or al salto (fried), including cassoeula, busecca, the inevitable cotoletta and many other specialties. Identità Milano can be the occasion for a visit to the city and a good “excuse” to taste its most typical gastronomic side. Therefore, here are 11 establishments in Milan and its province, that you can visit in order to taste some typical recipes in their original or renewed versions, according to the whim of the chef.

To arouse your curiosity and stimulate the appetite, here are some indications of the awaiting specialties, taken from the menu that each restaurant in the La tradizione list has designed for Identità Golose: Nicola Cortesi of Osteria Brunello, for instance, proposes a Milanese risotto and a small veal goulash, while the classic yellow risotto will be at Trattoria La Pesa and giallo Milano 2010 at Antica Osteria Magenes; fans of the fried version, on the contrary, can go to Trattoria Milanese to taste it creamed with Grana Padano.

Where can you taste the famous cotoletta? Take the road to Antica Trattoria del Gallo and that to La Trattoria del Nuovo Macello where the “Coteletta” awaits you, and your palate will be pleased and satisfied. Those who love veal kidneys, can taste them in a crispy version with porcini mushrooms at Osteria I Valtellina discovering its main dish, the Mashed potatoes with vanilla and kidney cooked in oil, garlic and concentrated parsley.
