Summa, more than wine

And among the great biodynamic wines in Magrè some unusual creations by Davide Scabin appeared

"F & F", Felicetti & Fried, the new invention signed by Davide Scabin-Pastificio Felicetti. The dishes were presented during the 14th edition of Summa, an event dedicated to biodynamic wines and created by Alois Lageder, winemaker in Magrè (Bolzano)

Summa has just ended. The event is organised by Alois Lageder in his estate in Magrè, in Alto Adige, where he opens the doors to friends, excellent winemakers who come from all around the world to present their wines, on the same days as Vinitaly.

Two days in Cason Hirschprunn dedicated to Italian and foreign wine tasters, with whom the owners could share the chance to taste precious wines and talk with the guest producers. The focus is on biodynamic and organic viticulture and this year Errore. Riferimento a collegamento ipertestuale non valido., celebrated it 90th birthday. The latter is the Italian association grouping producers and distributors of biodynamic agriculture ad food products. Only those who follow strict international standards can have the right to use this trademark.

SUPER LABELS. We recommend an interesting presentation by Weingut Peter Jakob Kühn, with a selection of extraordinary riesling. The producer, who was present during the first edition, is described by Lageder himself as a «wine producer with whom the idea of Summa took shape: making biodynamic wines known. Year after year we have tasted vintages that were more and more characterised by this sustainable approach».

French winery Moulin de Breuil is also interesting with a delicate rosé wine made with 65% Grenache and 35% Carignano grapes. A simple, immediate wine, with a great aromatic elegance. The red wine is called élégance, a blend mostly made with Grenache together with Carignano and Syrah, an explosion of freshness and fruitiness.

Among the Italians, we recommend Caiarossa di Riparbella, from the heart of val Cecina, not too far from Bolgheri: they make a refined Bordeaux-blend in perfect balance. A non banal wine. Another deserved recommendation goes to the late-harvest of Petit Manseng - Oro di Caiarossa 2010, in preview at Summa.

SCABIN BREAK. Among the partners of this edition, for the fifth year in a row, there was Pastificio Felicetti: they launched the new format in the Monograno line, Le Pàche – “the slaps” in dialect – a Sud Tirol interpretation made by Davide Scabin, chef at Combal.Zero in Rivoli (Torino). The “F & F”, Felicetti & Fried Street food was excellent: an arancino and pasta sofficino. The first was cooked with the pasta Monograno Matt spaghettone, a true dough ready to be shaped; the sofficino with spelt wheat: light and finely balanced with a filling of ricotta, Grana Padano and spinach.

LAGEDER’S LAGREIN. Last but not least, the news announced by “Mister Summa”, a Lagrein which will be on sale as of May. It is called Conus Lagrein Riserva 2011 and it is a very elegant and immediate wine, with a cherry-red colour and an intense aroma of plums and berries, finely mixed with elegant spices and with a finish of bitter chocolate and liquorish. It has a persistent taste of fresh fruits followed by an earthy finish.
