Prin Polsuk is the sous chef at restaurant Nahm inside the Metropolitan by Como Hotel in Bangkok. This is currently the most celebrated Thai restaurant in the world – and not just because it is at number 32 in the 2013 World’s 50 Best and at number three in the Asian World’s 50 Best. This is Australian Dave Thompson’s restaurant. He’s a chef-authority who in 2010 decided to move the Nahm in London – first Michelin star for a Thai restaurant, obtained in 2002 – to Bangkok, in order to have a closer connection with the richness of ingredients of an extraordinary country.
