The dishes in the menu are both reassuring and intriguing: Lamb cooked in salt, tequila and lemon, Chargrilled wild turbot with two gazpachos, reduction of lemon, chargrilled chard... Among all, the Crudità di mare with carpaccios of seafood, calamari, anchovies, boulot and Gillardeau oysters deserves a special mention.
