Chef Diego Rossi is a joyful and sparkling young man, always ready to have fun. Pay attention though: Trippa is a serious business. It’s one of the best restaurants in our country. In terms of consistency, concreteness, variety. At Trippa the food is always good, the menu is constantly updated, and classic dishes, such as the iconic Veal in tuna sauce, are not afraid of the unescapable imitations. On top of that, every day the suppliers will bring the chef some unusual offal, some special cut, some exceptional product.
