Daniel Canzian, the last prominent pupil of Marchesi, has always been good: one had the feeling, however, that he still had to reach his full maturity. Mission accomplished. Canzian has always been connected with Italian tradition; with grace, he paints a sort of notebook of our great tradition, interpreted with a never-excessive contemporary approach, made of touches and nuances, perfect fusions and delicate references. Italian regional tradition is always the main character, but interpreted by a wise and skilled chef who gives it new life, and therefore a renewed charm, in a coherent and personal journey.
