La Trota

Two brothers, called Serva, and a charming place. La Trota is a restaurant by the river in a small immaculate oasis. The two brothers complement each other, working in turns in the dining room and kitchen. Their cuisine embodies the fascinating alchemy of this little-known area and their skill in making local products (especially the freshwater fish) noble, in a measured and effective gourmet version.

The lacquered Quail with blackberries, must and sesame is succulent; the Egg in artichoke is iconic; the Bottoni di burrata, with wild strigoli and foie gras are elegant; and the Soup of tench with capellini pasta and spicy broth is rich of flavour.
