Why didn’t this prototype by Osteria Francescana’s Giuseppe Palmieri  become a format? This venue in downtown Modena shows its greatness in its simplicity, offering a selection of high-quality products served with the same attention that Beppe gives to the 3-starred restaurant at the end of the street. On the menu, a limited number of sandwiches: the perfect way to talk about territory and seasonality. There are also a few dishes, halfway between great classics of taste like the Tortellini with supercream, and a low-key creativity of the Emilia-ramen.
