Why did Gianluca Gorini win the Identità Golose Guide "Best Chef" award 2019? First of all, because here we ate a masterpiece of a dish, maybe the most interesting of the year: Roasted artichoke, artichoke sauce, salted capers and Matcha tea, pure perfection, astounding finesse. But that’s quite limiting. The truth is that Gorini, born in 1983, is finding an inner peace that shines through his dishes: they have never been more complex, stylish, heavily creative but never extreme, as if his new restaurant was triggering a talent that was already crystal-clear but not yet flying high.
