Nove a Villa Della Pergola

Set in one of the most beautiful gardens in Italy, Nove offers a seasonal selection, marked by forays into the inland areas of Liguria as well as other Italian regions. The «chef’s welcome» is already a hit: it could be Shrimp friggitello; Macaron with seeds and tartrà (a sort of Piedmontese savoury flan); Monviso blue cheese, pear and onion dumpling; Ox heart with an hoax sphere.

The quality of the vegetable-seafood pairings and the stuffed pasta are worth mentioning. The snails «Ligurian way» have a stunning personality…
