The fifteenth-century halls of Palazzo Vescovile, Noli, which you can reach with a cable car that takes you right at the reception, host one of the most fascinating restaurants in the area. Giuse Ricchebuono is an amazing performer of an extremely advanced cuisine: his vision stretches from traditional flavors to the occasional contemporary touch.

Through the years, the bread-crusted Atlantic bonito with pickles and bottarga, the Beans and shrimp pasta, the Smoked horse mackerel with chestnuts, and the Mullet with celery and Grana Padano have all become great signature dishes.
