Macàre are the iconic witches of the popular tradition of Salento. They made magic and prepared potions and philtres. In this case, however, “the only magic is in the food”, as stated in the significant declaration of intent that in this restaurant in Alezio seems to be the inspiring principle of every activity.
Indeed one can notice some of magic in Daniela Montinaro’s and Vincenzo D'Aprile’s dishes. It’s the magic of a straightforward and homely tradition that remains proudly faithful to its origins, despite the obligatory choice of making it gentler, lighter, younger.
