Maurizio Raselli, born in Alessandria in 1980, called his first restaurant "3 Rane" inspired by the inn in Florence where – according to a bizarre legend – Leonardo da Vinci worked as a cook in partnership with Botticelli.
Indeed, Raselli has acquired a significant experience, and after lots of roaming he settled in Salento. Large numbers have little to do with this place where the chef has chosen to follow a personal minimalism with strong and genuine features. You can notice this in Tongue, parsley and spunzali: stewed and in gelatine, it is served with sliced oranges, roasted spunzali and Piedmontese bagnetto verde.
