The first manages the dining hall, and when he talks about wine it’s like a waterfall. Davide works in the kitchen, joining technique and creativity and letting his creations speak for him. He does what he likes, for himself and for his clients, without following any modern trend, playing with balances, choosing local top-quality products, often from small suppliers, and never buying off-season.
