To Massimiliano Alajmo, Faith is a soup plate with nothing in it. Unless you’re willing to look past the obvious. And maybe right under the plate you’ll find a custard covered with a golden leaf, a precious metal used as it was an altarpiece in a Byzantine temple. This is just the predessert of Le Calandre’s tasting menu, usually a minor step, a brief introduction to the sweet ending of the meal. But not here: here everything has a solid quality, in thought and in action. Miraculously skilled craftsman, this chef goes with an earthly flow, practicing with pop creations like the fried Neapolitan pizza dedicated to famous pizza chef Alfonso Mattozzi and masterpieces of Italian strength such as the Bone marrow with herbs.
