In Milan there’s a group of authentic Japanese restaurants who must defend themselves from the competition of those places, Chinese restaurants above all, that want to profit of the popularity of sushi and sashimi. Yoshinobu Kurio, aka Yoshi, which is also the name of his establishment, has written these words on his restaurant’s homepage: “Yoshinobu, authentic Japanese restaurant”. And, knowing he’s appreciated by his fellow countrymen too, a Japanese translation is also available. Strict in his use of raw materials, Yoshi uses his creativity in his recipes. They serve extraordinary grilled heads of noble fish, or fried moeche when in season. The chef is thrilled whenever he’s asked to work freehand.
