2018 has been an important year for Hotel de la Ville. The prestigious hotel in Monza, right in front of the magnificent Villa Reale: has turned 60. Since 1958 it is run by the same family, the Nardis. Its restaurant Derby Grill is now a strongpoint; chef Fabio Silva is in the kitchen. His talent grew here, where he arrived as an apprentice commis when he was 19 years old. His Neapolitan origins appear in his dishes, yet they are not prevailing, he’s found the right mix. Try the Sturgeon steamed with Mariage Frères tea, with Belgian endive and tomato.
