Ada e Augusto a Cascina Guzzafame

At Cascina Guzzafame chef Takeshi Iwai tries to interpret Italian tradition with respect, but through lenses made in Japan. So following the Japanese product-culture he focuses on raw materials (often produced by the maison itself) and embraces our gastronomic tradition while he also adds the heritage of his original culinary sensitivity: a thrilling triple death jump. And a successful one too: take the mondeghili, the tiramisu, the risotto. But most of all the Tsukemen Tagliatelle with ragù, where this geographical and culinary meeting becomes an original recipe that evolves in front the guests and in their palate. Elating.
