Le Api

The kitchen at Le Api is like a painting by Bruegel. There are people coming and going with precise and synchronised timing. Hide Matsutomo, patron-chef of this delicious place where balance is king, sets the rhythm. He moved 20 years ago to Italy from Japan. In his cuisine, Hide preaches order, linearity, clean flavours. These features are finely expressed in the dishes of his “neo osteria”. A treasure chest full of strong and easily recognisable flavours, that are both reassuring and never deceptive: what you’d expect from a place that aims to offer certainties and concreteness.
