La Madia is the centre of the experiments of chef Michele Valotti. It’s an extraordinary place. From the outside, it resembles an ordinary restaurant from the province; inside, it’s as if you were in a trattoria from the Sixties. A range of local dishes in the menu, at affordable prices. However, when looking at the menu closely, you’ll notice carefully selected raw materials that are often used in forgotten recipes: Pecora arsa, Oca in onto, Cavallo alla brace. There’s further reason for interest: the wide use of fermentation. And the use of raw methods: direct flames, oven smoking... Stunning.
