Chef Giacomo Lovato graduated from Alma and acquired experience with Carlo Cracco and Claudio Sadler. His cuisine starts from mountain tradition to which he adds international gourmet trends. On top of the à la carte menu, there are two tasting menus: one is closer to mountain classics, the other offers the chef the opportunity to fully express his creativity.
For instance, in his excellent use of balsamic notes in the Quasi un riso in cagnone (risotto, celeriac, mountain pine, rosemary and mushroom extract). There are almost 350 wines in the list, mostly Italian.
