He gives new life to the cuisine of Roero and mixes it with excellent raw materials from all around the world. There are many dishes not to be missed, like the agnolotti with roast sauce, or simply with smoke, the fassone "dalla testa ai piedi" [literally from head to toe] and the finanziera.
