It’s unlikely you’ll find a cook from Campania who won’t include strong culinary references to his origins. Domenico Stile is no exception, but contrary to others he’s also acquired a heritage of high-profile international and Italian experiences, and so he has brought a gust of originality to the menu at Enoteca La Torre.
It’s easy to be notice the Mediterranean touch, yet his Fusilli with Genovese sauce, with shallot, are focused on the contrast with the hazelnuts from Caprarola, the bay leaves and the foam of Moscow Mule, while the Lemon risotto with marinated calamari and buffalo milk yogurt has an acidity counterbalanced by the asparagus.
