Paolo Teverini and his family are the stars of a beautiful Italian story. Born in 1946, he spent his life between catering and hôtellerie, because in the 70s, when he was still a boy, he came here to work in his in-laws’ hotel. Today, the Tosco Romagnolo is a little gem with a thermal pool on its rooftop and a culinary restaurant on the ground floor. You would expect a nice selection, if a little vintage. But every dish we tried betrayed the chef’s desire to dare – and to be up-to-date. A nice surprise.
