Abocar’s "two cuisines" meet in downtown Rimini, in a fancy and charming place where Mariano Guardianelli, Argentine by birth but relocated in Romagna, creates half-breed dishes with a strong character. If the Soyotta – soy sauce with Romagna shallot – has become his signature dish, other dishes, such as the Cappelletti with small snails, seaweed and dried cuttlefish broth, are the chef’s cuisine manifesto: imagination, technique and local tradition, with a South American touch.
