One of the best traditional foods in the city, thanks to a chef and owner who, even with his presence, reveals an origin and a perspective on the world that, although modern, we could definitely call old-fashioned. We’re talking about Piero Pompili, the man at the heart of Al Cambio as well as the commissioning authority for his own dishes, like the Ragu tagliatelle, in our opinion the best in the city. Or the Bolognese cutlet, a great combination of a crunchy ham, some aromatic breadcrumbs, a velvety tomato sauce and an invigorating moisture from the broth.
