Luigi Tramontano is a quiet man: his deeply Mediterranean dishes do all the talking, bringing together vegetables and seafood, affected by tradition but still touched by the chef’s imagination. The Eggplant variation, served as a starter, is tasty and sophisticated, and creates a perfect harmony between flavor, beauty and creativity.
