Seeing her nephew’s achievements, Grandma Andreina would surely smile from above. Chef Errico Recanati kept the best features of a rich family tradition. But he was able to modernize it as well, confirming his signature style one year after the other. Smoke, Flames and Fire are the names of his three tasting menus and the elements his research has been focusing on all these years. The giant, ever-turning roasting spit, symbol of the restaurant, floods the entrance with its scent, warming the guests’ heart with its treats: for example, the magnificent partridge or the guinea fowl –cooked from a distance – with roots and sage extract.
