Denis Lovatel is an undisputed genius of pizza. He created an unconventional dough: light, crunchy, far from both the Neapolitan and the Roman style. He paved the way for others. Tidying up his old family business and, while he was at it, pizza’s image. The good news is he won’t stop: now he’s choosing to pursue those values he already shared with Slow Food: get rid of the waste; only buy from animal-friendly farms; manufacture with a certified production chain; choose suppliers that use sustainable fishing methods; make seasonal and biodiverse pizzas; support local economy.
