Monday, March 9th

As usual, the last day brings fireworks. Massimo Bottura will speak on the theme of the congress, and with him, during the morning in the Auditorium, there will also be Riccardo Camanini, as well as Kyle and Katina Connaughton. Before the break, there will also be the Cantine Ferrari: the Art of Hospitality talk show. The afternoon, instead, will be sweet, thanks to Dossier Dessert, in collaboration with Valrhona. Works will continue in the other rooms too. The focus will be on green cuisine with Identità Naturali in Sala Blu 1. The usual, awaited session with Identità di Pane e di Pizza, in collaboration with Petra® Molino Quaglia, will feature eight lessons in Sala Blu 2 with Italian and foreign speakers, young faces and great masters. Finally, last day for Identità di Champagne – Atelier des Grandes Dames. The closing event of the congress will be at 5.30 pm in the Auditorium, with the guys from Il Tortellante.
