Fireworks, as usual, on the last day. In the morning, in the Auditorium, Massimo Bottura will cover the theme of the congress with other giants: Riccardo Camanini, Niko Romito and Josep Roca. In the afternoon, instead, space will be given to Dossier Dessert (in partnership with Valrhona), with a focus on fine dining and pastry making. In the other rooms, a focus on Identità Naturali (in partnership with Mielizia), with five exceptional speakers; on Identità di Formaggio (in partnership with Parmigiano Reggiano), four lessons not to be missed; and on the classic Identità di Pizza (in partnership with Petra® Molino Quaglia), with eight speakers among great masters and young faces. Last day also for Identità Cocktail, in partnership with Bibite Sanpellegrino and Perrier
