At last. This is the first thought that comes to mind, now that we can once again enjoy the cuisine of Eugenio Boer. The Ligurian-Dutch chef, at work in Milan, started over with a restaurant that bears his name (or rather its pronunciation), of which he’s also the enthusiastic patron. Here he can express himself in absolute freedom. He chose to do so with an original format: there’s no list of items, just some “inspiring words”, some titles (Il bosco; Selvaggina; Hommage à Lyon; Il viaggio...) ideas, points of departure for an inspiration, which change regularly. Guests choose three or five inspirations and leave the kitchen to take care of the rest.
