At 62, Antonello Colonna has more ideas than hair on his head and a white beard that gives him the air of a venerable maestro. His open Open Colonna hasn’t made the news in the past few years, but perhaps this is because this rooftop restaurant on two floors works the way it is, with its cuisine on the edge between Roman tradition and curiosity, with an impeccable service and a classic-contemporary décor.

A visit to this place reminds us that the restaurant industry is founded on certainties and savoir-faire and not just sense of adventure. And how about the food? A playlist of classics: Cannolo with salted cod, sour cream and candied lemon, Negativo di carbonara, Crispy suckling pig, smoked potatoes and mustard.
