The focus is based on the local region and emphasises its ingredients. The style aims at harmony rather than special effects: it’s intimate, minimalistic, neat. This is proven by the Octopus with tomato mayonnaise, stracciatella and basil, the Spaghetti with clams, date tomatoes, capers and powdered olives, the Grouper with leek, lemon and mullet.
