Umberto De Martino is a cook who knows what he wants. After rising the ranks in Campania, where he comes from, and acquiring some experience abroad, he has now settled in the province of Bergamo. The opportunity came when they offered him to direct Florian Maison, a restaurant with inn in a nice hilly place a few km from Bergamo. De Martino is the author of a brilliant and tasty cuisine, which fully draws its inspiration from the Mediterranean Sea but also allows some original interpretations with more Nordic and richer dishes (Veal sweetbread with butter, Snails in lard, Stewed rabbit with peppers), though his focus is still seafood.
