China is around 31 times larger than Italy, yet we almost completely ignore its huge culinary culture. When in 2010, husband Yike Weng and wife Chiara Wang Pei opened Bon Wei bringing that tradition to Italy through an elegant and modern restaurant, they were revolutionary. Eight years later the outcome is positive, and the restaurant is full. Chef Zhang Guoqing created a menu that unites the 8 different culinary schools of China in around 20 recipes impossible to find elsewhere. There’s no tasting menu, so it’s best to ask for their help to create a journey through unknown corners of China.
