Iyo is the first “Japanese” restaurant in Italy to receive a Michelin star and is also the starred restaurant that serves the largest number of people each day - 130 on average. The levers of its success are basically two: the first is the farsightedness of patron Claudio Liu, his desire to grow, slowly and patiently. The second goes by the name of Michele Biassoni: the cook is improving fast, with the rigour typical of Brianza as well as Shaolin patience. This is the secret of the marvellous Crab salad with kimizu sauce, celery, sea asparagus and onion marinated with soy and vinegar.
