There’s no better moment for a restaurant than when, after finding its identity, it starts to reinforce its cuisine based on character and strong flavours. This is what happened at N.O.I., which stands for Nuova Osteria Italiana; after 2 years of activity it continues to surprise with its simple yet uncommon style, which in many ways recalls a high-quality Parisian bistro: mostly locally sourced ingredients, lots of vegetables, herbs and spices, all seasoned with lots of originality. The ideas are in line with the times, as in the case of the Grilled mackerel with chickpeas and plums.
