This is a favourite destination among Italian and foreign gourmands. Chef Andrea Fantini is slightly over 30-years old but has already acquired a significant experience and a sound technique. He has developed it through various experiences that allow him to handle the best raw materials with skill, whether they come from the sea by the Gulf of Trieste, or from the surrounding countryside.
His dishes are contemporary, and never go beyond a sensible new take, with a well-defined interpretation. The flavours are strong and recognisable, and, something not to be ignored, they’re easy to identify.
