The food here has sound technical foundations and is strongly focused on the product, with an attentive selection of all the ingredients, both those self-produced (like the vegetables from the kitchen garden and the remarkable bread and pastries) and the large selection of excellences from Piedmont and Italy.
An emblematic example is given by the Lamb from Valle Stura, served with vegetables from the kitchen garden, castagnaccio and currants. The lamb comes from a high-standard farm, with only a limited number of animals; the cooking is exceptional; the just is perfect. As for the vegetables, chards, French beans, shallot, all excellent. The currants are very fresh, aromatic, acid; the castagnaccio gives extra richness.
