November, 2011: Davide Fiorentini opens ‘O Fiore Mio just when the culinary world starts talking about pizza gourmet. Since then, the format hasn’t changed a bit, and this restaurant in Faenza became a landmark for the nouvelle vague of pizza makers. ‘O Fiore Mio is a pizzeria with a kitchen that at lunch has a menu of classic, Neapolitan pizzas, some fresh pasta and some salads, while at dinner the pizza is served already cut in 8 slices, the toppings are added after baking and are the result of a valuable research on pairing options and seasonal products. The menu changes with the seasons.
