It’s a mistake to look at the Franceschetta as a sort of younger sister of Massimo Bottura’s Osteria Francescana. It’s a mistake not because that’s not true, but because it exposes a basic inaccuracy. If the Francescana is the best jazz concert in history, the Franceschetta is its jam session, the moment in which the talents improvise some solos. Even though some dishes are the same, they change depending on who is at the stoves, sometimes acquiring more intense flavors and sometimes presenting bolder textures (except for the Tortellini with supercream: those always stay the same).
