La Fenice di Villa Carlotta

The phoenix lament is a love song to the culture, the territory and the Sicilian ingredients. Chef Claudio Ruta’s style proves itself as one of the most passionate on the whole island. An extension of Villa Carlotta, charming hotel born from the renovation of a nineteenth century farm, the restaurant overlooks an enchanting olive grove. Ruta’s cuisine is contemporary, rich, straightforward, marked by a good balance and some convincing pairings, a result of his research and of reusing some ancient local ingredients: an expression that sometimes reaches baroque heights, full of words and strong hints.
