Accursio is always surprising us: genius has a way of manifesting itself, and we have to honor it. The Soft-boiled egg with an almond blancmange or ricotta white and an apricot jam yolk is a little masterpiece of perfection. The Seafood spaghetti (with sea urchin, prawns, clams, caviar and seaweed) are spectacular. But really the whole menu here is a thing of imagination, invention and delight. Every dish comes from an emotion: a way to make a statement revisiting sea and land in a unique way. «The history of a body», a very original tasting menu, describes the journey of the human life, from embryo to the eternal life. Food, philosophy, feelings.
