A national bastion of a culinary tradition that you can breathe just walking through the door, located in a fancy Villa owned by the De La Gatinais Counts. If the location honors its history, the desire for innovation is tangible. Mariella Glorioso, owner of the facility, decided to hire the young chef Santino Corso to give a modern boost to the place. His cuisine is eclectic, contemporary and always evolving; he mixes Sicilian ingredients with non-native products, using new techniques as well as traditional cooking methods. Don’t miss the complexity of the Sicilian tongue: tongue, fennel, mustard, shallot and herring.
