Essenziale is a work in progress, devised and run by chef Simone Cipriani, who offers his guests his personal vision of contemporary food, multifaceted and groundbreaking: revisiting classic recipes, saving just the essential ingredients and cooking methods, blending in ideas and new ingredients.
Essenziale is also drawing its inspiration from real or virtual travels: the US for the Trout with scamorza and apples served as an hot dog, or the Peanut cookies and cream. Or South America and the Mediterranean with the Quinoa risottata with dried peppers, mint and sumac.
