Ippazio Turco is the standard bearer of signature cuisine in South Salento: fine, pop and on three wheels too. Indeed, from his apecar in Tricase Porto he serves street food. And then there’s the trattoria where meat and seafood recipes have equal importance. Yet it is at Lemì that the chef fully expresses himself, without any shortcuts, but with a recognisable, unique and clear character.
As in the case of Shocking Gambero, where the basic pink colour of the dish becomes almost fluorescent thanks to the marinade with sea water and prickly pears, served with puntarelle, mint, guava and some more prickly pears. The result is sour but sweet, complex and light, and very fresh.
