It’s not easy to be original on the Amalfi Coast: everyday, tons of tourists from all over the world flood the area anyway, so chefs are usually lazy. But Alessandro Tomolino is not happy with reproducing a worn pattern. In June 2017 he took over the food section of Hotel Residence and refurbished the dining hall and kitchen of the restaurant.
You can reach it through a wonderful stairway by the Amalfi Cathedral. On his table, meat and fish are equals. The Shrimp in kataifi pastry with saffron carbonara, spinach and black garlic is worth mentioning: a journey that starts from the Mediterranean and ends very far away.
