Vallesina is a fascinating corner of Marche, and in this landscape Serena D’Alesio, chef and patron with her brother Mario of the relais that their family turned into one of the most charming spots of the whole area, had her training. In the dining hall, Mario welcomes his guests with the modesty of someone whose skills as a sommelier and connoisseur are unquestionable; in the kitchen, Serena has proved her worth through her understanding of the raw material, dealing first-hand with the farmers. The Millefoglie with steamed Arcevia rabbit and crispy lentils, Verdicchio jelly and celeriac is a must.
